Fudge recipe for today

Microwaved at that.

You will need:
1 tin condensed milk
15ml syrup
2 cups (500ml) castor sugar
125g butter or stork baking margarine
(**add right at the end - 5mls vanilla essence and 80 g of chocolate - I have used milk white cookies and cream flavour as well as minty crisp** the more popular one) Will try it later today with dark chocolate.

Place all ingredients into a large bowl and stir, cook for 2 mins on high. Stir again.
Cook on high for a further 8 mins (we have a 1000watt microwave) stirring vigorously at one minute intervals. You need to cook this in a LARGE bowl as the fudge boils up and will easily overflow a smaller dish. Once it has risen up and sunk again - you're half way there - for those who have a different strength microwave.

It begins to set quickly after the chocolate is added in so work fast, remembering that it gets incredibly hot.
Slice into blocks after 15mins in the fridge.
I have made two batches so far and have to hide them as the family love eating it so much.
Sweet tooths all around.
