Mac 'n Cheese.
I remember asking the kids once what one meal would they remember their childhood by?
Their answer, all three and Hubby too - my macaroni cheese and bacon.
One packet of 250g macaroni (fattis and monis - I am brand loyal) or fusilli or small elbows.
1.5 l of freshly boiled water.
5mls of salt and in the microwave for 12 minutes on full power.
She wants me to teach her to cook, I am more than happy to have a kitchen helper.
1 pkt of (250g0 bacon pieces or chopped like I did this batch.
Some crushed garlic and sliced spring onion.
Ordinary onion works as well too.
Microwave white sauce:
500 mls of milk
60 mls of cake flour
1 lump of butter
Also on cooked full power for 2 minutes at a time - around 7 mins in total, whisking every 2 minutes.
(Add 1/2 cup of grated cheese - to taste)
I even add some of Ina Paarman's Italian cheese spice if I have no cheese.
Stir together and call them for food.
If we had guests I would put this amount in a large flat rectangular dish and cover with more cheese, a sprinkling of paprika and bake/grill in the oven for a while.
My atkins friendly version:
I head of cauliflower, chopped bacon, spring onions, peppadews, a little cheese sauce and a dollop of ham flavoured cream cheese.
It was VERY good.
